The future is plant-based. Today, more and more people, including chefs, are endorsing vegan and plant-based meals and part of the reason is it’s seen as healthier and more sustainable for the planet.
A personality who has changed the face of plant-based diets is the American Celebrity chef Matthew Kenney. He is one of the world’s first chefs at the forefront of plant-based cuisine, an author of 12 cookbooks and a best-selling memoir, a culinary educator, and CEO of Matthew Kenney Cuisine – a company specializing in plant-based living across several markets.
Chef Matthew has developed an exclusive plant-based menu for Folia, the latest opening at Four Seasons Resort Dubai at Jumeirah Beach. This is in partnership with HRH Prince Khaled bin Alwaleed bin Talal Al Saud’s KBW Ventures.
This new restaurant is located in the heart of the resort, in its own secluded garden oasis surrounded by lush shady palm trees – the perfect ambiance for plant-based cuisine.
The menu includes 12 plant-based items including starters, entrées, and desserts. The full Folia menu is available in the resort’s newly unveiled garden oasis, as well as the hotel’s Wellness Menu available in all rooms and suites.
What makes Chef Matthew’s menu unique is the inclusion of local flavors. For me, the raw Beet Hummus and the Dukkah-crusted Avocadoes are standout dishes, but the Coconut Cream Pie stole the show.
